Factory for production of frankfurters and non-perishable sausages, Plovdiv
The factory for production of frankfurters and non-perishable sausages was built in Proslav area, city of Plovdiv. Its construction was financed under two projects by SAPARD for 3 million EUR and it is completely in compliance with the requirements of the European standards. Another 2,5 million EUR are company own investments.
According to SAPARD the entire equipment is a brand new one and is manufactured by member-states of the European Union.
Two of the biggest cutters in the country are located in it. These are machines for preparing frankfurters mixture) and they are of the German company “Krämer & Grebe”.
The two vacuum filling machines “Karl Shnell”, Germany, work 24 hours non-stop. A small number of sausage producers in the country and even in Eastern Europe could boast with the possession of special portioning machine that makes the frankfurters and other perishable sausages in absolutely one and the same form and by means of computer program it could be determined what are the exact weight, diameter and length of a single product. Six four-unit cooking-smoking chambers (“Fessmann”, Germany) make the frankfurters ready for consumption.
The NASSR system for critical points control that was introduced for the first time in a sausage factory in Bulgaria follows each stage of the production – from supplied raw materials to outcome of ready product. A metal detector (“Mettler-Toledo”, Belgium) checks the incoming lots of meat. Physical-chemical laboratory FOOD SCAN provides express analysis within 20 seconds, and microbiological laboratory MICRO FOSS 32, which is the only express microbiological laboratory in Bulgaria at the moment, gives the results up to 7 hours. They are manufactured by “Foss Elecrtic” company.
The discipline regarding maintenance of perfect hygiene in the production premises is firm. Cameras have been installed to follow and record the working process 24 hours. Any deviation in quality and hygiene are registered and eliminated at the very moment. Factory development does not end here. Investments continue to be made in new equipment and new products elaboration.
